3 Plant-Based Veggie Pizzas

PIZZA!!

It’s no secret that pizza is one of my favourite foods.  

Along my journey towards being healthier,  I learned to make delicious pizza that better suited my plant-based diet and that I can eat without the guilt. Life is too short to not enjoy a great slice of pizza!

Pizza is one of those perfect foods that lends itself so nicely to variations and experimentation. I enjoy the process of making it myself and playing with different flavours and ingredients. I wanted to share a few of my go-to flavour combos. You can modify these recipes to suit your own diet. I choose soy cheese simply because I can’t do dairy. At the bottom of this post, I shared my spelt flour pizza dough recipe for you to try as well.

THAI PIZZA

This pizza is hands-down my most requested pizza from friends and family! DO not forget the bean sprouts, it sounds weird to put bean sprouts on your pizza, but trust me, it’s so good.

WHAT YOU NEED

  • 1 zucchini cut into thin slices
  • 1 large red pepper cut into thin strips
  • 2 carrots, grated
  • 1/2 cup crushed peanuts
  • 1 cup cilantro chopped
  • 2 cups of fresh bean sprouts
  • 2 cups of peanut sauce (recipe below)
  • 2 cups of soy mozzarella, cashew cheese, or regular mozzarella

Use my spelt pizza dough, your own recipe, or store bought and just build your pizza! The cilantro goes on after it comes out of the oven! Bake at 400 degrees for approx 20 mins.

THAI PEANUT SAUCE
2 garlic cloves, minced
1 teaspoon gingerroot, minced
5 tablespoons peanut butter
2 tablespoons honey
2 tablespoons rice wine vinegar or 2 tablespoons apple cider vinegar
1 tablespoon soy sauce

Melt and stir all ingredients together on the stove on low for 5 mins.

 

PESTO PIZZA

I am now making my own pesto or buying the dairy-free options as pesto usually has a lot of cheese in it. Pesto is so delicious with anything so naturally, this pizza is fool-proof!

WHAT YOU NEED

  • 1 small jar of pesto
  • 1 red pepper cut up small
  • 3 cups of spinach
  • 1 small red onion
  • 1/2 cup of toasted pine nuts
  • 1 cup pf pitted black olives cut up small
  • 2 cups of mozzarella (or your cheese of choice)
  • Pizza dough (recipe below)

The pesto always goes on the pizza dough, then the cheese, and finally the veggies and olives. Bake at 400 degrees for approx 20 mins or until done. Garnish with pine nuts.

ARUGALA PEAR PIZZA

This is inspired by the blue cheese, prosciutto, walnut, arugula pear pizza that I used to make. It’s actually how my love of arugula started! Man, it’s hard to pick a favourite but this pizza is really special!

WHAT YOU NEED

  • 1 box of pre-washed organic arugula
  • 1 ripe pear thinly sliced
  • 1 large white onion thinly sliced
  • 1 zucchini thinly sliced
  • 1/2 cup of roasted pine nuts or walnuts chopped up 
  • olive oil,  fresh pressed garlic and salt
  • 1tbsp of balsamic vinegar 
  • 1 cup of mozzarella (soy, or try goat cheese or to be really decadent…. BLUE CHEESE) 

Start with your favourite pizza dough (or use my spelt recipe below). Before we start building our pizza we need to saute the onion in a little olive oil and salt and pepper. Once the onions are almost soft, add the balsamic vinegar and garlic and continue to cook until the onions start to caramelize. Remove from heat.

There is no sauce on this pizza, it’s not needed with the flavourful toppings! Just brush the dough with a little more olive oil before you start building. I like to put the cheese down first, then the pear, onion, and zucchini. Bake at 400 degrees until the pear looks soft and the pizza looks done. As soon as it comes out of the oven, cover the pizza with the chopped up arugula and roasted nuts and let sit for a few minutes.

SPELT PIZZA DOUGH

Ingredients
2 cups Spelt flour
1 1/2 teaspoons quick-rising yeast
1 teaspoon baking powder
1 1/2 tablespoons olive oil or other cooking oil
1 teaspoon honey
2/3 cup warm water
Directions
1. Stir first 3 ingredients together.
2. Add remaining ingredients. Stir well.
3. Knead until smooth. Place in a bowl and let rise for at least an hour.
4. Stretch to fit greased 10- or 12-inch pizza pan.

I usually double this recipe because when is one pizza ever enough?
