Today I woke up and had a real situation on my hands… I had plethora of ripe avocados that needed to be eaten.
What to do? lol
Yes, we made some guacamole that we had poolside for brunch. But I still had a few perfectly soft, beautiful avocados that needed to be enjoyed TODAY.
AVOCADO BANANA PUDDING!
Great idea right? And so simple to make. This pudding only requires 5 ingredients and takes 5 minutes to make. My family and I enjoyed it with some granola, banana and chia seeds as a late lunch/snack and it was a real hit!
WHAT YOU NEED
- 2 large perfectly ripe avocados
- 2 medium spotty bananas
- 2 tbsp of peanut butter
- 1-2 tbsp of maple syrup (depending on how sweet you’d like it)
- a tiny splash of almond milk (optional)
WHAT TO DO
Put everything into your blender or food processor and blend until smooth. Add whatever toppings you have. It would be amazing with coconut flakes, cacao nibs, granola, or toasted almonds.
Serve immediately:) Makes two large servings.
