Healthy, insanely easy banana breakfast cookie bites have been on heavy rotation here in my kitchen. The kids love them, I love how healthy they are… it’s a win-win.
Full of healthy fats, complex carbs, fruit and fibre, these cookie bites will be a staple in your kitchen as well.
WHAT YOU NEED
- 2 bananas
- 1/2 cup of almond butter
- 1 tsp of vanilla
- 1 cup of quick oats
- 1/2 cup of shredded coconut
- 1/8 cup of chia seeds
- 1/4 cup of dried cranberries
- 1 tbsp of cinnamon
- 1-2 tbsp of coconut flour (sub regular flour if needed)
- dash of sea salt
WHAT TO DO
- Preheat the oven to 350 degrees.
- Blend the banana with the almond and vanilla in a blender.
- In a bowl combine the dry ingredients.
- Simply pour the wet banana mixture into the dry and stir.
- Now if it looks wet, just leave it to soak up some of the mixture. The chia and the coconut flour really soak up the moisture. If you don’t have coconut flour, sub a bit more regular flour:)
- Form into little cookie bites and bake for 10 minutes for a chewy, cookie dough consistency.
Keep these in the fridge and serve for breakfast, school snack or pre/post-workout treat.
