Why are all endurance athletes raving about beet juice? My husband is a road cyclist and competes at a high level with the pros. Wanna guess what they are bringing with them on their training rides… BEET JUICE!
Past studies have shown that the juice can help cut minutes off your race time, improve your tolerance against high-intensity exercise (allow you to stay in the game longer) and improve blood and oxygen flow to the muscles. Known for decades as a liver-protective food, beets may be the new superfood on the block:)
I know some people have a hard time consuming raw beets, if this is you, I would make an effort to give beets another try. If you have been following me for awhile, you know that I love beets! I do feel better after a beet juice or smoothie and try different recipes every week using beets.
This juice is perfect for a post-workout recovery drink or to reap the many other benefits of beets:) Beets on their own are sweet but with the added apple you won’t even notice all the other vegetables in there.
WHAT YOU NEED
- 1 large organic beet
- 1 green apple
- large chunk of ginger
- 1 cucumber
- 3-4 celery stalks
- 1 lime
Wash and peel all ingredients and run them through your juicer. This recipe makes 2 juices. If you don’t have a juicer you could easily make this a smoothie by adding a little water or coconut water to the ingredients and blending them in a high speed blender.
