Carrot Oat Muffins – Vegan GF

Happy Sunday!

I hosted a baby shower yesterday and made up this carrot muffins to serve along with other more decadent goodies. And even though there was cake pops on the table, everyone was raving about these carrot oat muffins:)

They are perfect for:

  • kids lunches
  • healthy snacks
  • breakfasts
  • to bring to a event
  • for travel or camping

I made them using only quality organic ingredients and since everyone at the shower asked for the recipe, I decided to share them with you all!

WHAT YOU NEED

  • 2 flax eggs (2 tbsp of freshly ground flax with 4 tbsp of water, allow it to sit for 10 minutes before you use)
  • 2 cups of spelt flour
  • 1 cup oats
  • 2 tsp of baking powder
  • 1tsp of sea salt
  • 1/2 cup of Naked Coconut Virgin coconut oil
  • 1 heaping tbsp of pumpkin spice (or a blend of cinnamon, ginger and nutmeg)
  • 2 cups of finely grated carrots (I use my food processor to get them super one and small).
  • 1 cup of coconut sugar
  • 1 cup of almond milk
  • 1/2 cup of applesauce 
  • 1/2 cup of chopped walnuts (optional)

WHAT TO DO

  1. Preheat the oven to 375 degrees.
  2. “Cream” the coconut oil in with the flax egg and sugar. When baking with coconut oil, you don’t want it melted, just room temp (same as butter!).
  3. Now add the milk, the milk has to also be room temperature or else it will harden the coconut oil (I’ve made this mistake so so many times). 
  4. Add the applesauce and stir all the wet ingredients until thoroughly combined.
  5. In a separate bowl combine all the dry and stir.
  6. Combine the wet ingredients to the dry and stir without overdoing it. Carefully fold in the carrots and walnuts if you are adding them and stir gently until all combined.
  7. Now scoop out the mixture into your muffin tin (I always use muffin liners but you could also grease the tin) and bake for 25 minutes checking in on them in those last few minutes as everyone’s oven varies.

Enjoy! I keep them these beauties in the fridge to keep for longer as this recipe seems to make a few more than 12 (closer to 16 small muffins). But obviously…. they are best enjoyed straight out of the oven!
