Cranberry Orange Muffins, Vegan & GF
Vegan Baking Bliss. These cranberry orange muffins are perfect for the holidays and deliver on that classic cranberry orange flavour in a much healthier version of the classic.

Made with spelt flour, a flax egg and coconut sugar, you don’t have to feel guilty about having two of these delicious muffins (which is exactly what I did as soon as they came out of the oven…)!
There are a few speciality items in this recipe that you could swap out for stuff you already have in your house. But I highly suggest following the recipe for optimal results!
WHAT YOU NEED
DRY INGREDIENTS
- 2 cups of spelt flour
- 3/4 cups of coconut sugar
- 2 tsp of baking powder
- pinch of sea salt
- 1 cup of frozen cranberries
- 12 pecans for garnish
WET INGREDIENTS
- 1/3 cup of freshly squeezed orange juice
- 4-5 drops of orange extract
- 2 tbsp of orange marmalade (optional but OMG)
- 1/2 cup of dairy free nogg. I like So Fresh Almond Nogg but you could use regular egg nogg if you wish.
- 1/2 cup of melted coconut oil– I like Naked Coconuts
- 1 flax egg (1 tbsp of flax 3 tbsp of water whisked)
WHAT TO DO
- Preheat the oven to 375 degrees and line your muffin tin with baking cups.
- In a large bowl, mix the dry ingredients together.
- Juice your orange and mix with the melted coconut oil, nogg, marmalade, extract and flax egg.
- Warm up your cranberries in the microwave for 1 minute. Then transfer to your blender and on the lowest speed, chop up the cranberries. Don’t make them into mush:) Just nice chunky pieces.
- Now it’s time to combine everything! Mix the wet with the dry and add the cranberries.
- Divide the batter into 12 muffins and top each with one pecan.
- Bake for 22-25 minutes.
- Once finished, transfer the muffins to a cooling rack as soon as you can handle them (usually 5 minutes after they come out of the oven.)
