Done like dinner! This recipe takes less than 30 minutes and is easy to whip up. Perfect for a main dish, side salad, something to bring to a bbq or for leftovers.
WHAT YOU NEED
- 2 large broccoli crowns cut up into small bite-size pieces
- 2 green onions chopped up
- 2 cups of cooked quinoa
- 2 cups of cherry tomatoes chopped
FOR THE SAUCE
- 1 cup of cashews (preferably soaked)
- 1/2 lemon juiced
- 2 tbsp of apple cider vinegar
- 1 tbsp of honey dijon mustard
- 1/2 cup of water
- 1/2 sweet onion
- 1 clove of garlic
- 1tbsp of maple syrup
- 1 tbsp of nutritional yeast (optional but highly recommended)
WHAT TO DO
Chop up all the veggies and cook the quinoa in some organic vegetable broth. To make the sauce, put everything into a high speed blender and blend until smooth. Combine everything and serve immediately or chill in the fridge.
