I love avocados. They make such a healthy, satisfying snack or a perfect addition to any meal. This guacamole delivers all the benefits of avocados plus gives you a real hit of protein!
The secret ingredient—edamame beans!
Edamame is a young soybean that has been harvested before the beans have had a chance to harden. You can buy them shelled or in the pod, fresh or frozen. I buy them frozen, already shelled so I can quickly heat them up and use them in a salad, alone or in this yummy guacamole!
Edamame is high in protein, calcium and iron. A perfect addition to a plant-based diet:)
- 1 cup of cooked shelled edamame
- 1 large avocado
- 1 lime, juiced
- 2 tbsp of olive oil (or any high quality oil)
- 1/4 cup of cilantro
- 1 clove of crushed garlic
- 1 tsp of cumin
- salt and pepper
- Cook edamame in either boiling water or in the microwave for 3 minutes in a bit of water.
- Put edamame, avocado, cilantro, cumin, garlic and lime juice in a food processor and pulse until smooth.
- Serve with raw veggies, in tacos, on crackers or with corn chips.
- This stores in the fridge for 2 days but is best if consumed immediately:)
