With it being BBQ season, I’ve created the perfect grilled veggie, leafy green salad that will be enough for a light dinner or a perfect side for your BBQ grilled meat.
Also, have you tried the sriracha smoked tofu yet? It’s really a nice treat compared to regular tofu and doesn’t need to be cooked, you can just chop it up and add it to the salad as is.
WHAT YOU NEED
- 3-4 cups of chopped mixed greens (arugula, romain, spinach etc… what ever greens you have!)
- 1 red pepper
- 2 cobs of corn (or canned corn would work)
- 1 red onion
- 1 cup of cherry tomatoes
- 1 package of sriracha smoked tofu (could sub any meat, tofu or even hard boiled egg)
FOR THE CREAMY TAHINI DRESSING
- 1 lemon juiced
- 1/2 cup of tahini
- 1 tbsp of olive oil
- 1 clove of garlic
- 1 chipotle pepper (you could also use chipotle spice or seasoning)
- salt and pepper
WHAT TO DO
- Fire up the BBQ. You want it to be at medium heat.
- Shuck the corn and chop up the red pepper and red onion.
- Coat all 3 in a little olive oil and salt and pepper. Place on the BBQ. The red pepper and onion should go in a BBQ grilled basket. Corn can go directly on grill. Please keep an eye on your grilling veggies!
- While those are on the grill, chop the lettuce and/or greens, tomatoes and tofu and add together in a big salad bowl.
- Next make the dressing. Combine all the ingredients in your high speed blender. If it looks a bit thick, add a splash of water.
- Once the corn and veggies on the grill and cooked, cut the corn off the cobb and add to the big salad bowl.
- Dress with about half the dressing (save the other half for a mother meal) and toss.
