Lentil soup is meant to be hearty, filling, and really the ultimate vegan comfort food. It is packed with protein, fibre and all your veggies!
WHAT YOU NEED
6 cups of vegetable broth
1 large onion, chopped
2 celery stalks chopped
2 cups of red skin potatoes cubed
2 cups of yams also cubed
1 small cauliflower cut into small pieces
3 cloves of minced garlic
1 1-2 cups of dry brown or green lentils
1 tbsp of cumin
1tsp curry powder
1tbsp Good oil to saute with ( I used coconut for this)
Salt and pepper to taste
And cilantro to garnish
WHAT TO DO
- Salute the onion and celery and garlic until soft (approx 8-10 mins) in a large pot.
- Add the cumin, curry, potatoes, cauliflower and yams and mix and continue to cook for a few more minutes.
- Now add the vegetable broth and lentils and bring to a boil. Now reduce the heat to simmer and cook for 45-60 minutes or until lentils are tender.
A note for cooking with lentils-> never add salt to the broth when cooking lentils. You can only season after they are fully cooked. Otherwise they become tough and harden instead of becoming soft and tender.
This soup can be served as is or pulsed with a immersion blender for a creamier finish.
Garnish with cilantro.
