Nourishing Root Veggie Soup

A cleansing, veggie soup.

Ingredients
- 2 large beets peeled
- 2 onions chopped
- 4 celery chopped
- 4 carrots chopped
- 2 yam peeled and chopped
- 1/2 cup chopped basil
- 3 garlic cloves minced
- 8-10 cups of organic vegetable broth
- 3 cups of chopped kale
- salt and pepper
Instructions
- Get everything prepped ahead of time by chopping up all your veggies.
- Start by sautéing the onions in a large soup pot and adding the garlic salt and pepper once onion starts to soften.
- Add the celery, carrots, beets, basil and yams and cook in the soup pot for 10 minutes before adding the broth.
- Add the veggie broth and bring to a boil. Then turn the heat down and let simmer with lid off for 30 minutes or so.
- Add the kale and let simmer for another 10 minutes.
- Serve up and enjoy!
Notes
- A warm piece of homemade bread would make this soup the perfect comfort food for a dark, cold rainy day.
