Raw Walnut Meat Taco Salad

I have just finished my 5 Day Raw Food Cleanse and are feeling vibrant, and re-energized. Giving my body a break from coffee, cooked foods, anything processed and of course wine feels good. I truly enjoyed my week of fresh organic fruits, veggies, nuts and seeds!

Of course the down side to eating raw is all the food prep! To make delicious raw meals, a lot of chopping, soaking, and prepping goes into every meal. 

I wanted to share my favourite meal from the week. My whole family kept raving that this was by far, the best taco salad they had ever had. I happily ate it for dinner, lunch then dinner again!

I used to use soy ground round as a meat alternative when I was first transitioning towards a vegan lifestyle. I am so glad to have found a much tastier, healthier alternative that is made from wholesome ingredients and is easy to make at home.

This raw walnut taco meat doesn’t have to be soaked ahead of time which is why it’s a real keeper in my books. Soaking your nuts requires foresight… something a busy working mom doesn’t always have:)

WHAT YOU NEED

For the Walnut Taco Meat:

  • 1 cup of raw walnuts
  • 1/2 cup of sun-dried tomatoes
  • 1 tsp cumin
  • 1/2 tsp of cayenne
  • 1/2 tsp of garlic powder
  • Salt to taste

For the Cashew Cream (optional but highly recommended)

  • 1/2 cup of raw cashews 
  • juice from 1 lemon
  • 1/4 cup of water

For the salad:

  • 1-2 avocados
  • 1 cup of chopped up cherry tomatoes
  • 1 red pepper
  • 1 mango
  • 1/2 cup of chopped cilantro
  • 3 green onions chopped
  • 1 package of spinach, arugula or any leafy green.
  • Black Corn Tortilla Chips to crush and sprinkle on top. (optional)

WHAT TO DO

  1. To make the walnut meat put all the ingredients into a food processor and blend until well combined but still chunky.
  2. To make the cashew cream put all things in a high speed blender and blend until smooth.
  3. To make the salad, simply chop up all the ingredients and put in a large bowl.
  4. Add the walnut meat and cashew cream and toss!
  5. Optional to add some black corn tortilla chips sprinkled on top.
  6. Serve and enjoy!
