Summer’s mean backyard BBQ’s and burgers. I wanted to share a vegan option that has mega flavour and is better for your health and for the planet than a traditional beef burger. These spiced walnut chickpea burgers had a great texture and flavour. Adding nuts to beans is key to making a hearty vegan burger that pleases a crowd.
The walnuts and flax provide you with your healthy fats (read HERE why you should eat more walnuts), complex carbs and protein from the chickpeas and are packed with healing spices and herbs.
Also…these burgers took me 15 minutes to make:) You guys know that convenience is key when I am creating new recipe for you all. No need for soaking the nuts or lots of prep work with these burgers. Although I do suggest making them up earlier in the afternoon so you can pop in them in the fridge to set. This really helps them stick together if you are planning on bbq’ing them.
I enjoyed mine in a bowl with salad and roasted cauliflower and my kids loved them with a little mango chutney, avocado and lettuce on a bun. For lunch the next day I crumbled on and sprinkled it onto a salad with lemon tahini and hot sauce and it was filling and delicious.
WHAT YOU NEED
- 1 can of chickpeas
- 1 cup of walnuts
- 1 small yellow onion
- 2 cloves of garlic
- 2 flax eggs or 2 regular eggs if not vegan.
- 2 tbsp of olive oil
- 1 cup of fresh cilantro
- 1tsp of each: cumin, chilli, turmeric and paprika
- salt and pepper
WHAT TO DO
- Using your food processor, chop up the onion and garlic.
- Next add the rest of the ingredients and blend until the mixture is combined but not mushy. We aren’t trying to make hummus here:) If you find it to wet, add a few oats.
- Form the mixture into 6 burgers on a greased cookie tray and put into fridge to allow them set.
- Bake at 400 degrees for 30 minutes flipping once.
Enjoy in a bowl, on a bun, or crumbled into a salad the next day.
