Yay! Sugar free cookie success! Yes they actually turned out after a few failed sugar free attempts:)
I know I needed to come up with something easy, so I basically made a bliss ball but without the dates and baked it instead.
Genius, I know.
Sugar Free PB and Coconut Cookie

A true treat! Coconut and peanut butter heaven with absolutely no sugar:)

Ingredients
- 1/2 cup of melted coconut oil
- 1/2 cup of crunchy Adams peanut butter
- 2-3 tbsp of unsweetened apple sauce
- A few drops of stevia***
- 1 cup old fashioned oats
- 1/2 cup unsweetened coconut flakes (I have the large flakes from Costco) or unsweetened shredded coconut.
- 3 tbsp of chia
- 1 cup of spelt flour
- 1-2 tbsp of cinnamon
- pinch of course sea salt
Instructions
- Melt coconut oil until liquid.
- Add the peanut butter, apple sauce and chia in with the melted oil and mix well. Wait until the chia seeds start to bind it all together. I stirred for about a minute to make it happen.
- Add oats, coconut flakes, flour, cinnamon and salt and stir all ingredients together.
- Now because there is no egg, you need to get your hands in there and make the cookies by pressing the mixture together and forming the cookies.
- Place on a un-greased piece of parchment paper and bake at 400 degrees for 10-12 minutes.
- Transfer to a cooling rack and allow them to cool down completely.
Notes
- ***A couple of things. I did add a few drops (like two droppers full) of my liquid stevia to the coconut oil and pb. I had it and wasn't using it in my tea so decided to go ahead and use a bit. You could any kind of natural peanut butter (no Kraft allowed!). Also I always use spelt as my flour. Why? Because it tastes great and although isn't technically gluten free, it is a way healthier option than wheat. Buckwheat, almond and kamut flours come in a close second. But nothing bakes better than spelt. I will never buy wheat again!
