Broccoli has been around for awhile and we know that it’s good for us but do you know how incredible broccoli actually is! I mean, it is the superman of all veggies and should be on you grocery list every week! I buy a head of broccoli every time I am at the produce market. Broccoli is a cool season vegetable so is in season from October-April. Of course here in Canada we can buy broccoli all year round.

Vegan Broccoli Soup

A creamy, delicious broccoli soup. probably the best broccoli soup I have ever tried!

Ingredients
- 1 onion finely chopped
- 2 medium carrots finely chopped
- 2 stalks of celery finely chopped
- 1 clove of garlic minced
- 5 cups of broccoli chopped
- 5 cups of organic vegetable broth
- 1 cup of cashews
- 2 tbsp nutritional yeast
- 2 tbsp of olive oil
Instructions
- Heat oil in a large soup pan and add onions, garlic, celery and carrots. Saute for 5 minutes.
- Add broccoli and cook for another 5 minutes.
- Add 4 cups of broth ( I used Vegetable Better than Bouillon) and cook until vegetables are tender.
- In the meantime, blend 1 cup of cashews with the remaining cup of broth in blender until smooth.
- Once vegetables are tender, add the cashew mixture along with the nutritional yeast and salt and pepper.
- Bring back to a simmer then remove from the heat.
- Use a immersion blender to roughly blend the soup to your desired liking. (I like a few broccoli chunks in my soup).
- Serve and enjoy!
